To celebrate the arrival of cocktail colours, we’re sharing some of our favourite summery mocktail recipes, perfect for the whole family to enjoy (of course, adults can always top them up with a splash of prosecco or something a little stronger…)


Frozen peach bellini

Ingredients

  • 2 ripe peaches, peeled and sliced
  • 1 cup sparkling apple juice, plus more for serving
  • 1 teaspoon lime juice
  • Ice cubes

Method

Place the sliced peaches into the freezer for 1 hour. When frozen, combine with the lime juice and apple juice and blend. Pour over the ice cubes into your glasses, topping up with an extra inch of apple juice.


Raspberry lemonade

Ingredients

  • 2 tablespoons honey
  • 3 lemons
  • 1 punnet raspberries
  • Soda water
  • Ice cubes

Method

Squeeze the lemons and then blend the juice with most of the raspberries and a little soda water. Press the mixture through a sieve so the liquid is smooth. Mix with honey and the rest of the soda water, then pour over ice cubes into glasses. Garnish with mint leaves and raspberries.


Pineapple and lime punch

Ingredients

  • 3 cups pineapple juice
  • 1 cup ginger beer
  • 1 cup soda water
  • 4 limes
  • Ice cubes

Method

Pour the pineapple juice, ginger beer and soda water into a jug. Top up with ice and the soda water. Squeeze in the juice of three limes, and slice the final lime for garnish. Pour into glasses to serve.

Kiwi mojito

Ingredients

  • 2 ripe kiwis, chopped
  • 1 large lemon
  • A few sprigs of mint
  • 2 tablespoons honey
  • 1 cup soda water
  • Ice cubes

Method

Muddle the chopped kiwis with the juice of the lemon and the mint. Add the honey and soda water and mix. Pour over ice cubes into your glasses, adding a sprig of mint for garnish.


Orange fizz

Ingredients

  • 1 cup fresh orange juice
  • 1/2 cup tonic water
  • 2 tablespoons honey
  • 2 lemons
  • Several strips orange peel
  • Ice cubes

Method

Squeeze the lemons and mix with the orange juice and honey. Pour over the ice into glasses, then top up with tonic water. Garnish with the orange peel.


Virgin Pina Colada

Ingredients

  • 1 bag frozen pineapple chunks
  • 4 large scoops vanilla icecream
  • 1/2 cup coconut milk
  • 1/4 cup pineapple juice
  • Ice cubes
  • Several fresh cherries and fresh pineapple slices

Method

Blend the frozen pineapple, ice cream, coconut milk and pineapple juice. Pour over the ice cubes into glasses. Garnish with the cherries and freshly sliced pineapple.
